Cooking Steps

  • Before starting, preheat broiler on high.
  • Before starting, add 1 1/4 cups (2 1/2 cups) water, Vegetable Stock Powder and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high. 
  • Using a strainer, rinse rice until water runs clear.
    To the boiling water, stir in rice and reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed. Remove from heat. Set aside, still covered.
  • Peel, then mince or grate garlic.

  • Heat a large non-stick pan over medium, add 1 tbsp (2 tbsp) oil.
  • Pat chicken dry with paper towel.
  • In a medium size bowl, toss chicken with garlic, half the Zesty Garlic Blend, salt and pepper.
  • Add chicken to pan. Cook for 8-10 min, turning occasionally, until golden and cooked through.**
  • Add 2 tbsp (4 tbsp) butter and 1 tbsp water to pan, stir to make sauce.

  • Halve zucchini lengthwise, then cut into 1/2 inch moons.
  • To an unlined baking sheet, add zucchini, 1 tbsp (2 tbsp) oil. Season with Zesty Garlic Blend, salt and pepper, toss to combine. Roast in the middle of the oven 3-4 min, until golden.

  • Fluff rice and divide between plates.
  • Divide zucchini between plates. 
  • Divide chicken between plates and pour extra sauce over chicken.
  • Snip chives over top of chicken.
