Cooking Steps

Broil butternut squash

  • Add butternut squash and 1 tbsp (2 tbsp) oil to a foil-lined baking sheet. Season with salt and pepper, then toss to coat. 
  • Broil in the middle of the oven until golden and cooked through, 6-8 min.

  • Heat a large non-stick pan over medium-high heat. When hot, add 1 tbsp (2 tbsp) butter, walnuts to the pan.
  • Toast, stirring often, until golden, 3-4 min. (TIP: Keep your eye on it so it doesn't burn!)
  • Season with salt, then transfer to a plate.
Cook ravioli

  • Add ravioli to the boiling water, then reduce heat to medium-high. Cook, stirring occasionally, until tender, 2-3 min.
  • Reserve 1/4 cup (1/2 cup) pasta water, then drain and return ravioli to the same pot, off heat. 
  • Add garlic spread. Gently, toss to coat.

  • Meanwhile, reheat the large non-stick pan over medium-high. 
  • When hot add 1 tbsp (2 tbsp) butter, then garlic puree and spinach. Cook, stirring often, until spinach wilts, 1-2 min. 
  • Add ravioli, cream, reserved pasta water and butternut squash. Cook, stirring gently until coated, 1 min. 
  • Season with salt and pepper.

  • Divide creamy ravioli between plates. 
  • Sprinkle with walnut topping. 
  • Sprinkle Parmesan Cheese overtop.
