Cooking Steps

  • Before starting, preheat the oven to 450°F.
    Wash and dry all produce.
  • Heat a large non-stick pan over medium-high.
  • Pat turkey dry with paper towels. Season with salt and pepper. 
  • Add 1 tbsp (2 tbsp) oil to pan, then turkey. (NOTE: Don't crowd the pan; cook in 2 batches if needed.) Pan-fry 2-3 min, flipping half way through, until golden. Transfer turkey to a parchment-lined baking sheet. Roast in the middle of the oven for 10-12 min.

  • Thinly slice green onions, keeping greens and whites separate.
  • Reheat pan over medium.
  • When hot, add 1 tbsp (2 tbsp) butter, onions, potatoes and peas. Season with salt and pepper. Cook for 3-4 min, stirring often until.______

  • Meanwhile, zest, then juice lime.
  • To a small bowl, add honey, chili-garlic sauce and lime juice. Season with salt and pepper. Stir to combine.
  • Massage the pouch of rice to separate grains.
  • Add rice, lime zest, curry paste, spinach and 1/2 cup water to pan with veggies. Cook for 1-2 min stirring often until warmed through,

  • Thinly slice turkey.
  • Divide rice between bowls.
  • Top with turkey and green onions.
  • Spoon chili-lime sauce over turkey.
