  • Peel, then cut half the onion into 1/4-inch pieces (use whole onion for 4 portions).
  • Cut zucchini into 1/2-inch pieces.

  • In a large pot, heat 2 tsp (4 tsp) oil over medium-high heat.
  • When the pot is hot, add sausage and onions. Season with salt and pepper.
  • Cook for 4-6 min, breaking up sausage into smaller pieces, until no pink remains.**

  • To the pot, add orzo, zucchini, corn, chicken stock powder and 2 1/2 cups (4 1/2 cups) water.
  • Bring to a boil over high.
  • Once boiling, reduce heat to medium-low. Cook for 10-12 min, stirring occasionally*, until orzo is tender but still firm to the bite.

  • Roughly chop spinach.
  • Add spinach, garlic spread and half the Parmesan. Season with salt and pepper. Stir to combine.
  • Remove the pot from heat. Cover for 2 min, until spinach wilts. (TIP: Let orzo rest covered for another 1-2 min, if needed, for orzo to absorb more liquid.) Stir once more before serving.
  • Divide orzo between bowls. Sprinkle with remaining Parmesan.
  • Enjoy!
