Before starting, preheat the oven to 350ºF. Wash and dry all produce. Line a 12-cup muffin tin with paper liners. (NOTE: If you don't have paper liners, you can grease the tin with 2 tsp softened butter).Add raisins and enough warm water to cover by 1/2-inch to a small bowl.Using the large holes of a box grater, grate apple, then carrot. Heat a large non-stick pan over medium-high heat. When hot, add coconut and walnuts to the dry pan. Toast, stirring often, until golden, 3-4 min. (TIP: Keep your eye on them so they don't burn!) Transfer to a plate.

Drain raisins. Add flour, cinnamon, 3/4 tsp baking soda, 1/2 tsp baking powder and 1/4 tsp salt to a medium bowl, then whisk to combine.Add brown sugar, maple syrup, eggs and 1/4 cup oil to a large bowl, then whisk until fully combined. Stir in shredded apples and carrots. Add flour mixture to the large bowl with the sugar mixture, then stir with a spatula until combined. Stir in coconut, walnuts and raisins.

Divide muffin batter evenly between liners. Bake in the middle of the oven until golden-brown, 18-22 min. Transfer to a wire rack to cool completely. Remove muffins from the tin and transfer to a plate before serving.

Cut sausages at links.Heat a large non-stick pan over medium heat. When hot, add 1 tbsp oil, then sausages. Cook flipping often, until golden-brown and juices run clear when cut, 14-16 min.Divide muffins and sausages between plates.
