Baked Apple Pudding Chômeur

Serves 4 | with Maple Turkey Sausages

This delicious variation on the Québec classic can be eaten first thing in the morning! We've added spiced apples to the the original flavours of maple and brown sugar for a bit of added texture and warmth, and paired it with a side of maple turkey sausages. It's the perfect cold weather brunch!

Ingredients: Breakfast baking mix (enriched bleached flour, sugars (sugar, dextrose), leavening (baking soda, sodium aluminum phosphate, monocalcium phosphate), salt, modified corn starch, soybean oil, buttermilk powder) (milk, wheat) • Turkey maple breakfast sausage (turkey, sugars (brown sugar, maple sugar), sea salt, black pepper, maple flavour) • Gala apple • Maple syrup • 35% Cream (cream, milk, dextrose, cellulose gel, carrageenan, mono and diglycerides, cellulose gum, polysorbate 80, sodium citrate, disodium phosphate) (milk) • Brown sugar (cane sugar, molasses) • Ground cinnamon.

Cooking Steps

Prep

  • Before starting, preheat the oven to 425°F.
  • Grease the base and sides of a 9x13-inch baking dish with 1 tbsp butter.
  • To a medium pot, add cream. Bring to a simmer over high.
  • Once simmering, add brown sugar, maple syrup and 1/4 tsp salt. Reduce heat to medium-low. Cook 3-4 min, stirring often, until sauce thickens slightly.
  • Remove the pot from heat and set aside to cool slightly.
Make batter and bake

  • Meanwhile, core, then cut apples into 1/2-inch pieces. To a medium bowl, add apples and cinnamon, then toss to combine.
  • To a large bowl, add Breakfast Baking Mix, then add 1 1/2 cups water. Whisk to combine. Add apples, then stir to combine.
  • Spread apple batter along the base of the prepared baking dish, then pour maple mixture over top. 
  • Bake in the middle of the oven for 25-28 min until deeply golden and a toothpick inserted into the centre comes out clean.

  • Meanwhile, cut sausages at links.
  • Heat a large non-stick pan over medium. When hot, add 1 tbsp oil, then sausages. Cook 12-14 min, flipping often, until golden and juices run clear when cut.** (NOTE: If sausages are browning too quickly, reduce heat to medium-low.)
Finish and serve

  • Remove baked apple pudding chomeur from the oven and set aside for 5-10 min to cool slightly.
  • Divide pudding chômeur and maple sausages between plates.
  • Spoon any maple sauce from the bottom of the baking dish over top.
