Gala Apple

Before starting, wash and dry all produce. Halve cucumbers lengthwise, then cut into 1/2-inch spears.

Wrap tortillas in paper towels. Microwave until tortillas are warm and flexible, 1 min. (TIP: You can skip this step if you don’t want to warm the tortillas!)

Working with one tortilla at a time, spread hummus evenly over one side of tortilla, then top with cucumber spears and carrots. Sprinkle feta over top, then roll tortilla tightly to close. Cut tortilla crosswise into 2-inch bites. Repeat with remaining tortillas.

Peel, core, then cut apple into 1/2-inch slices. Plate mini hummus pinwheels with sliced apple alongside.
