Cooking Steps

Prep

  • Before starting, preheat the oven to 450°F. 
  • Bring a large pot of salted water to a boil. Start the recipe when the water is boiling.
  • Roughly chop parsley.
  • Roughly chop spinach.
  • Add spaghetti to the boiling water. Cook uncovered for 10-12 min, stirring occasionally, until tender.
  • Strain spaghetti, reserving 1/3 cup pasta water, then return spaghetti to the same pot, off heat.
Prep and bake meatballs

  • Prepare a parchment-lined baking sheet.
  • To a large bowl, add ground pork, Italian breadcrumbs, half the parsley, 1/2 tsp Italian Seasoning and 1/2 tsp garlic salt. Season with pepper, then mix to combine.
  • Roll mixture into 10 equal-sized meatballs.
  • On the prepared baking sheet, arrange meatballs. Roast in the middle of the oven for 8-10 min, until golden and cooked through.
Make marinara sauce

  • Heat a large non-stick pan over medium-high. When hot, add crushed tomatoes, tomato sauce base and 1/2 tsp Italian Seasoning. Add remaining garlic salt and pepper. 
  • Bring mixture to a simmer, then reduce heat to medium. 
  • Add spinach and 1/4 tsp sugar. Stir occasionally for 1-2 min, until spinach wilts. Stir in reserved pasta water.
Finish and serve

  • Transfer meatballs and any pan juices to the pot with marinara sauce. Stir to combine.
  • Divide spaghetti between plates, then top with marinara and meatballs.
  • Sprinkle Parmesan and remaining parsley over top.
