Before starting, preheat the oven to 350ËšF. Wash and dry all produce. Line a 9x5-inch loaf pan with parchment paper. (NOTE: If you do not have a loaf pan, use an 8x8-inch parchment-lined baking dish). Set aside. Add 2 tbsp butter to a small bowl. Microwave until melted, 30 sec. Grate zucchini. Stir together zucchini, egg, sour cream melted butter, cocoa powder, sugar, 1/4 tsp salt and 4 tbsp oil in a large bowl.
Add 1 cup flour and 1 1/2 tsp baking powder to zucchini mixture. (NOTE: You will have 1/2 cup flour left over. Save it for another creation!) Slowly stir until combined. Gently stir in chocolate chips. (NOTE: Don’t over-mix the batter. Stir until chocolate chips are just incorporated.)
Transfer batter to the prepared loaf pan. Bake in the middle of the oven until cooked through, 35-40 min. (NOTE: At the 35 min mark, insert a toothpick into the middle of the bread. If the toothpick comes out clean, the bread is done. If not, continue baking for another 5-6 min.)
Allow chocolate zucchini bread to cool in the loaf pan for 10 min. Remove chocolate zucchini bread from the loaf pan, then transfer to a wire rack. Cool for 1 hr before slicing and serving.
