Cooking Steps

Caramelize onions
1

Before starting, preheat the oven to 450°F.Wash and dry all produce. Heat a large non-stick pan over medium heat. When hot, add 1/2 tbsp oil, then onions. Cook, stirring occasionally, until onions soften slightly, 3-4 min.Add 1 tsp sugar and season with salt. Cook, stirring occasionally, until dark golden-brown, 4-6 min.Remove from heat. Stir in half the worcestershire, then transfer onions to a small bowl.Carefully rinse and wipe the pan clean.

Form and cook patties
2

Add beef, remaining worcestershire sauce, egg, Italian breadcrumbs and 1/8 tsp salt to a medium bowl. Season with pepper, then mix to combine.Form mixture into two 5-inch-wide patties.Heat the same pan over medium. When hot, add 1/2 tbsp oil, then patties. Pan-fry until cooked through, 4-5 min per side.** (NOTE: You may need to reshape patties in the pan.)Remove the pan from heat, then transfer patties to one side of an unlined baking sheet. Sprinkle cheese evenly over patties. Set aside.

Toast buns, melt cheese and make secret sauce
3

Halve buns, then arrange on the other side of the baking sheet with patties, cut-side up. Toast in the top of the oven until buns are golden-brown and cheese is melted, 3-4 min. (TIP: Keep an eye on buns so they don't burn!)Meanwhile, drain then finely dice, half the pickles. Add ketchup, mayonnaise and diced pickles in a small bowl. Season with salt and pepper, then stir to combine.

Finish and serve
4

Spread mayo sauce over top buns.Divide caramelized onions between bottom buns, then stack with patties, remaining pickles and spring mix. Close with top buns.Divide caramelized onion burgers between plates.

  • Suggestions: Consider reducing pickles for a more balanced flavor; melt cheese on buns while toasting for easier assembly.
  • Portions: Several reviewers noted the burgers were quite large; some suggested making four smaller patties instead of two.
  • Texture: For juicier results, be careful not to overcook the patties, as some found the beef a bit dry.
