- Before starting, preheat a large non-stick pan over medium-high heat.
- Pre-heat a medium non-stick pan over medium-high heat.
- Pat chicken dry with paper towels. Season with half the Gravy Spice Blend, salt and pepper.
- Add 1 tbsp (2 tbsp) oil to pan, add chicken. Cook for 4-5 min on one side, until browned. Flip chicken, then cover and continue cooking for another 4-5 min, until cooked through.**
- Meanwhile, peel, then cut onion into 1/4-inch pieces.
- Cut mushrooms into 1/4-inch slices.
- Add 1/2 tbsp (1 tbsp) oil to the medium pan over medium-high heat. Add onions and mushrooms. Cook for 3-5 min, stirring occasionally, until mushrooms are golden. Season with salt and pepper.
- Add 1 tbsp (2 tbsp) butter and wine to the pan with veggies.
- When butter is melted, sprinkle in remaining Gravy Spice Blend.
- Cook for 1 min, stirring constantly, until veggies are coated and mixture is fragrant.
- Add 3/4 cup (1 1/2 cup) water, whole grain mustard and penne.
- Cook for 2-4 min, stirring often, until sauce thickens slightly.
- Stir in creamy dressing, spinach and remove from heat. Season with salt and pepper.
- Slice chicken.
- Divide penne between bowls, top with chicken.
- Snip chives over top.
