Cut potatoes in half lengthwise, then cut each half into 1/2-inch thick wedges. On a baking sheet, toss potatoes with 2 tbsp oil. Arrange in a single layer. Season with salt and pepper. Roast in top of oven, until golden-brown, 25-28 min.

Meanwhile, pat chicken dry with paper towel. In a medium bowl, add chicken, 2 tbsp BBQ seasoning and 1 tbsp oil. Stir to coat. Transfer chicken to a foil-lined baking sheet. Roast in middle of oven, until chicken is almost cooked through, 14-16 min. (NOTE: The chicken will finish cooking in Step 4.)

Meanwhile, core, then cut bell pepper into 1/4-inch pieces. Heat a large non-stick pan over medium-high heat. When pan is hot, add corn, peppers, 2 tbsp oil and 1 tbsp water to the pan. Cover with a lid. Cook, carefully swirling pan often, until corn kernels are dark golden-brown, 4-6 min.

When chicken is almost cooked through and potatoes are out of the oven, turn oven broiler to high. Broil chicken in middle of oven, until cooked through and tops are golden, 4-5 min.

Meanwhile, peel, then mince or grate garlic. Finely chop chives. In a small bowl, whisk together sour cream, mayo, half the chives, 1 tbsp vinegar, 1 tsp sugar and 1/4 tsp garlic. (NOTE: Reference Garlic Guide in Start Strong.) Season with salt and pepper. Set aside.

Slice chicken. Divide chicken, corn mixture and potatoes between plates. Spoon ranch dressing over corn mixture and chicken. Sprinkle over remaining chives.
