Bake croutons

Before starting, preheat the oven to 450ºF. Wash and dry all produce. Cut ciabatta into 1-inch pieces. Peel, then mince or grate garlic. Whisk together garlic and 1 tbsp oil in a large bowl. Season with salt and pepper. Add ciabatta, then and stir to coat. Arrange ciabatta on an unlined baking sheet. Toast in the middle of the oven, stirring halfway through, until lightly golden, 4-5 min. (TIP: Keep an eye on them so they don't burn!)

Meanwhile, cut bacon into 1/4-inch pieces. (TIP: Use kitchen shears to cut bacon with ease!)Heat a large non-stick pan over medium heat. When hot, add bacon. Cook, flipping occasionally, until crispy, 5-7 min.** Remove the pan from heat. Using a slotted spoon, transfer bacon to a paper towel-lined plate. Set aside.

Make Caesar salad

Zest, then juice half the lemon. Cut remaining lemon into wedges. Add half the Caesar dressing, 2 tsp lemon juice, 1/2 tsp lemon zest and 1/4 tsp sugar to the same large bowl (from step 1). Season with salt and pepper, then whisk to combine. Add kale, then stir to combine. Add spinach, croutons, bacon and half the Parmesan, then toss to combine. (NOTE: If you prefer your salad well-dressed, use remaining Caesar dressing.)

Finish and serve

Divide Caesar salad between plates. Sprinkle with remaining Parmesan. Squeeze a lemon wedge over top, if desired.
