  • Core, then cut peppers into 1/2-inch pieces.
  • To an unlined baking sheet, add peppers, and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper.
  • Broil in the middle of the oven until lightly charred and tender-crisp, 5-7 min.

  • Heat a large non-stick pan over high heat.
  • When hot, add 1/2 tbsp (1 tbsp) oil, chorizo, onions and Cajun Spice Blend. Cook for 4-5 min, stirring often until chorizo is cooked through.**

  • Add stock powder, cream cheese, cream, penne and 1 1/2 cups (2 1/2 cups) water. Season with salt and pepper.
  • Cook, for 3-4 min, stirring occasionally until penne softens and sauce thickens slightly.

  • Add spinach to pasta. Cook for 1 min, stirring often until spinach wilts. (TIP: For a lighter sauce consistency, add water, 1-2 tbsp at a time.)
  • Divide pasta betwen bowls. Top with peppers.
