- Before starting, preheat the oven to 450°F.
Wash and dry all produce.
- Cut sweet potatoes into 1/2-inch wedges.
- To a medium bowl, add maple and miso broth concentrate. Stir to combine. Set aside.
- Pat chicken dry with paper towels. Sprinkle over half Asian Sesame Blend. Season with salt and pepper, then toss to coat.
- Add chicken to the bowl with miso mixture. Toss to combine.
- To one side of a parchment-lined baking sheet, add sweet potatoes, half the Asian Sesame Blend and 1 tbsp (2 tbsp) oil. Season with salt and pepper, then toss to coat.
- Add chicken to the same baking sheet as veggies. (NOTE: For 4 servings, use another parchment-lined baking sheet for chicken). Spread any remaining maple mixture over chicken.
- Roast in the middle of the oven for 10-14 min, until chicken is opaque. (NOTE: For 4 servings, cook chicken in the bottom and veggies in the middle of the oven.)
- Meanwhile, cut broccoli into bit-sized pieces.
- To another medium bowl, add broccoli and seasme oil. Season with salt and pepper, then toss to combine.
- Flip sweet potatoes, then scatter broccoli on top.
- Return sheet pan to the oven. Cook for 10-14 min, until veggies are tender and chicken is cooked through.**
- Divide chicken and veggies between plates.
