Cooking Steps

Prep

  • Before starting, wash and dry all produce. 
  • Peel, then cut shallot into 1/2-inch slices.
  • Peel, then mince or grate garlic. 
  • Pat shrimp dry with paper towels. Season with salt and pepper. 
Cook shallots and garlic

  • Heat a large pot over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, then shallots and garlic.
  • Cook for 1-2 min, stirring occasionally, until softened. 
  • Season with salt and pepper.
  • Add white cooking wine and cream cheese. Cook for 30 sec, stirring often, until liquid is reduced by half and cream cheese is melted.
Cook pasta

  • To the pot, add 3 cups (6 cups) water, 1/4 tsp (1/2 tsp) salt and 1/8 tsp (1/4 tsp) pepper.
  • Stir to combine. Bring to a boil over high.
  • Once boiling, stir in linguine and reduce heat to medium.
  • Simmer uncovered for 11-14 min, stirring often to prevent sticking to the pot, until linguine is tender. (TIP: If pasta sticks too much, add more water, 1/4 cup at a time. Scrape up any pieces stuck to the bottom of the pot.)
Cook shrimp

  • Meanwhile, roughly chop spinach.
  • Once linguine is tender, add shrimp to the pot. Cook for 2-3 min, stirring occasionally, until shrimp just turn pink. **
Finish pasta

  • Remove pot with linguine from heat, then add spinach, Alfredo Sauce and 1 tbsp (2 tbsp) butter.
  • Stir for 1 min, until spinach wilts and butter melts. Season with salt and pepper. 
Finish and serve

  • Divide pasta between bowls.
  • Sprinkle Parmesan cheese over top.
