Cooking Steps

Marinate chicken

  • Before starting, preheat the broiler to high. Wash and dry all produce.
  • Pat chicken dry with paper towels.
  • To a large bowl, add chicken, brown sugar and soy sauce. Season with pepper. Stir to coat. 
Prep and make cilantro mayo

  • Thinly slice cucumber into rounds.
  • Finely chop cilantro.
  • To a small bowl, add mayo and half the cilantro. Season with salt and pepper. Stir to combine.
Pickle veggies

  • To a small pot, add vinegar, 2 tbsp (4 tbsp) water and 2 tsp (4 tsp) sugar. Season with salt. Bring to a simmer over medium-high.
  • Once simmering, cook for 1-2 min, stirring often, until sugar dissolves. 
  • Remove from heat, then add carrots and cucumbers. Stir to combine.
  • Transfer veggies, including pickling liquid, to a medium bowl. Set aside in the fridge to cool.
Cook chicken

  • Line a baking sheet with aluminum foil.
  • Arrange chicken in a single layer. Spoon any marinade in the bowl over chicken.
  • Drizzle 1 tsp (2 tsp) oil over top.
  • Broil in the top of the oven for 10-14 min, flipping halfway through, until lightly charred and cooked through.**
Toast buns

  • When chicken is almost done, halve buns. 
  • Arrange buns directly on the middle rack of the oven, cut-sides up. Toast for 3-4 min, until golden. (TIP: Keep an eye on them so they don't burn!)
Finish and serve

  • Drain pickled veggies and stir in remaining cilantro.
  • Thinly slice chicken.
  • Arrange chicken, pickled veggies, hoisin sauce, crispy shallots, spring mix and cilantro mayo in serving bowls and plates
  • Divide buns between plates.
