Cooking Steps

Prep

  • Before starting, preheat the oven to 450°F. Wash and dry all produce.
  • Cut bok choy into 1/2-inch pieces. Rinse bok choy leaves to wash away any dirt.
  • Cut mushrooms into 1/2-inch pieces.
  • Thinly slice chives.
  • Pat salmon dry with paper towels. Season with half the garlic salt and pepper.
Cook salmon

  • To a parchment-lined baking sheet, add salmon. Roast in the middle of the oven for 10-12 min, until cooked through.**
Cook pasta

  • In a large non-stick pan, heat 1 tbsp (2 tbsp) oilover medium-high.
  • When hot, add mushrooms. Cook for 2-3 min, stirring occasionally, until softened slightly.
  • Add bok choy, cook for 2-3 min, stirring occasionally, until tender-crisp.
  • Add 1 tbsp (2 tbsp) butter, cream, miso broth concentrate, vegetable broth concentrate, remaining garlic salt, soy sauce, cream cheese and 1/2 cup (1/2 cup) water.
  • Bring to a boil, stirring frequently, until cream cheese is melted.
Finish pasta

  • Add penne and Parmesan. Reduce heat to medium. Cook for 3-5 min, stirring occasionally, until penne is tender and coated. Season with salt and pepper, then stir to combine.
  • Add half the chives and remove from heat.
Finish and serve

  • Divide pasta between bowls.
  • Divide salmon between bowls.
  • Sprinkle crispy shallots and remaining chives over top.
