Make Dutch baby

  • Whisk together 2/3 cup flour, 3 tbsp sugar, 1/4 tsp cinnamon and 1/4 tsp salt in a large bowl. (TIP: To measure flour properly, spoon flour into measuring cup, then level off top with the back of a knife so flour is level with the top of the measuring cup.) Add eggs and 2/3 cup milk, then whisk until smooth.
  • Carefully remove the pan from the oven. Add 2 tbsp butter, then swirl the pan until melted.
  • Pour batter into the pan. Return the pan to the middle of the oven and bake until Dutch baby is golden and puffed up, 16-20 min.

  • Meanwhile, arrange bacon strips in a single layer on a parchment-lined baking sheet. Roast bacon in the top of the oven until crispy and cooked through, 8-12 min.**
Prep and make apple compote

  • While bacon cooks, peel, core, then cut apple into 1/2-inch pieces.
  • Heat a small pot over medium-high heat. When hot, add 1 tbsp butter, then swirl the pot until melted. Add apples, 1 tbsp maple syrup, 1/4 tsp cinnamon and 1 tbsp water. Bring to a simmer.
  • Simmer, stirring often, until apples are tender and water is absorbed, 4-6 min. Remove the pot from heat, then cover to keep warm.
Finish and serve

  • Remove Dutch baby from the oven and set aside to cool slightly, 1-2 min. (NOTE: The Dutch baby will deflate as it cools.) 
  • Divide bacon between plates. 
  • Cut Dutch baby into wedges, then divide between plates. Top with warm cinnamon-apple compote. 
  • Sprinkle pecans over top.
  • Drizzle as much of the remaining maple syrup over top as desired.
