Cooking Steps

Prep and roast carrots

  • Peel, then slice carrots into 1/4-inch rounds. 
  • Thinly slice chives. 
  • Add carrots and 11/2 tbsp oil to a parchment-lined baking sheet. Season with 1/4 tsp salt and pepper, then toss to combine. 
  • Roast in the middle of the oven for 10 min. 
  • Remove baking sheet from the oven and drizzle maple syrup over top, then toss to coat. 
  • Continue roasting in the middle of the oven until carrots are golden and tender, 10-12 min.
Toast walnuts

  • Meanwhile, heat a large non-stick pan over medium-high heat. 
    When hot, add walnuts to the dry pan. Toast, stirring often, until golden, 3-4 min. (TIP: Keep your eye on walnuts so they don't burn!)
Finish and serve

  • Remove carrots from the oven and add 1 tbsp butter to the baking sheet. Toss carrots with butter on the baking sheet until melted, 1 min.
  • Transfer roasted carrots to a medium serving bowl. 
  • Sprinkle walnuts, goat cheese and chives over top.
