Cooking Steps

Make cookie base

  • Melt 5 tbsp butter in a large microwave-safe bowl. Add honey and 2/3 cup packed brown sugar, then whisk to combine.
  • Add 2/3 cup flour, coconut, oats, 1/4 tsp baking soda and 1/4 tsp salt to another large bowl, then whisk to combine. 
  • Add butter-brown sugar mixture to the bowl with the dry ingredients, then stir until fully combined and no dry spots remain. 
  • Press mixture along the base of the prepared baking dish in an even layer. 
  • Bake in the middle of the oven until lightly golden-brown, 10-15 min.

  • Meanwhile, add chocolate chips, espresso powder and 2 tbsp butter to a medium microwave safe bowl. Microwave in 30 second increments, stirring after each, until chocolate is completely melted and smooth. Set aside.
  • Add egg, white sugar and a pinch of salt to another medium bowl, then whisk to combine. 
  • Slowly add melted chocolate mixture into the bowl with egg and sugar, whisking constantly until combined. Sprinkle 1/4 cup of the remaining flour over top, then stir until combined.

  • Pour chocolate mixture over cookie base, then spread evenly using the back of a spoon or spatula.
  • Bake in the middle of the oven until chocolate layer is no longer shiny and slightly cracked along the edges, 15-20 min.
Finish and serve

  • Transfer baking dish to a wire rack to cool, 30-45 min. 
  • Remove bars by running a sharp knife around the edges of the dish, then tugging gently at the parchment paper to lift. 
  • Cut into desired number of slices.
