Cooking Steps

  • Before starting, was and dry all produce.
  • Trim then halve snow peas.
  • Peel, then mince or grate ginger.
  • Rough chop cilantro.
  • Cut mushrooms into 1/4-inch slices.
  • To a small bowl, add miso, fish sauce, half the ginger, peanut butter, and 1/4 cup (1/2 cup) warm water. Whisk to combine.

  • Pat dry chicken. Season with 1/2 tsp (1 tsp) Moo Shu Spice Blend and pepper. Toss to coat.
  • Heat a large pot over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, then chicken. Cook 5 - 6 min per side, until golden.**
  • Transfer chicken to plate. Cover to keep warm.

  • Reduce to medium heat.
  • To the large pot, add 1/2 tbsp (1 tbsp) oil, mushrooms, and snow peas. Cook for 2-3 min, stirring occasionally.
  • Add half the chili-garlic. Cook for 1-2 minutes untril fragrant. Transfer to a bowl, cover to keep warm.

  • To the same pot, add 1 tbsp (2 tbsp) oil and garlic and miso-peanut butter mix. Cook for 1 min until fragrant.
  • Add 3 cups (6 cups) of water. Bring to a simmer for 2-3 minutes. While simmering, add udon noodles. Stir occasionally to loosen noodles.
  • Meanwhile, slice chicken. Add any dripping to the pot.
  • Add veggies and chicken back to the pot.
  • Season with pepper.

  • Divide soup between bowls.
  • Sprinkle cilantro overtop.
  • Top with remaining chili-garlic if you'd like.
