Cooking Steps

Cook rice

  • Before starting, wash and dry all produce.
  • To a medium pot, add 1 1/4 cups (2 1/2 cups) water and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high. 
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed. 
  • Remove from heat. Set aside, still covered.
Prep

  • Meanwhile, zest lime. Juice half the lime, then cut remaining lime into wedges.
  • Halve zucchini lengthwise, then cut into 1/4-inch half-moons.
  • Roughly chop cilantro.
  • Pat tofu dry with paper towels. Using a fork, poke tofu all over, then cut into 1-inch pieces.
  • In a medium bowl, add tofu and half the cornstarch. Season with salt and pepper, then toss to coat. Set aside. 
Cook veggies

  • Heat a large non-stick pan over medium-high. 
  • When hot, add 1/2 tbsp (1 tbsp) oil, then onions and zucchini. Cook for 2-3 min, stirring often, until veggies soften slightly.
  • Add carrots. Cook for 3-4 min, stirring occasionally, until veggies are tender-crisp.
  • Season with salt and pepper, then transfer veggies to a plate. Cover with foil to keep warm.
Cook tofu

  • Heat the same pan over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, then tofu.  Cook for 6-7 min, turning occasionally, until crispy and browned all over.
  • Meanwhile, in a small bowl, stir together sweet chili sauce, soy sauce, lime juice, remaining cornstarch, 3 tbsp (6 tbsp) water and chili-garlic sauce.
Finish tofu

  • To the pan with tofu, add sauce.
  • Cook for 2-3 min, stirring often, until sauce thickens and coats tofu. 
Finish and serve

  • Add lime zest and half the cilantro to the pot with rice. Season with salt, then fluff rice with a fork to combine.
  • Divide rice between plates. Top with veggies and tofu. Spoon any remaining sauce in the pan over top. 
  • Sprinkle with remaining cilantro.
  • Squeeze a lime wedge over top, if you like.

If you've opted to get tofu, pat tofu dry with paper towels. Using a fork, poke tofu all over, then cut into 1-inch pieces. Season tofu the same way the recipe instructs you to season chicken.
