Cooking Steps

  • Whisk together oats, milk, maple syrup, cocoa powder and 1/8 tsp salt in a large bowl. Set aside.

  • Heat a medium non-stick pan over medium-high heat.
  • When hot, add coconut to the dry pan. Toast, stirring often, until golden, 1-2 min.
  • Transfer to a plate.

  • Add peanut butter to a small-microwave safe bowl. Microwave for 20-30 seconds until peanut butter is warmed through and drizzelable consistency.

  • Divide oat mixture between four large cups or bowls.
  • Drizzle peanut butter all over the top of each cup.
  • Cover and refrigerate overnight or for a minimum of 4 hrs.
  • Sprinkle toasted coconut and chocolate chips over top before serving.
  • Serve with your favourite fruit on top!
