If you've opted to get salmon, pat dry with paper towels, then season with salt and pepper. Reheat the pan over medium-high, then add 1 tbsp (2 tbsp) oil. When hot, add salmon. Cook for 3-5 min per side, until browned and cooked through. Remove from heat, then break salmon up into large flakes, removing and discarding skin. Add sweet chili sauce and soy sauce. Toss to coat.
