Cooking Steps

  • Before starting, preheat the oven to 450°F.
  • Bring a large pot of salted water to a boil over high (use same for 4 servings).
  • Wash and dry all produce. 
  • Heat a large non-stick pan over medium-high.
  • When hot, add beef and mirepoix. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.**
  • Add broth concentrate and Zesty Garlic Blend. Cook for 1 min, stirring often, until fragrant. Season with salt and pepper.

  • Meanwhile, to the boiling water, add tortellini. Cook for 2-4 min, stirring occasionally, until tender but still firm to the bite.
  • Reserve 1/2 cup (1 cup) pasta water.
  • Strain tortellini, then return to the pot, off heat.

  • To the same pan with beef and mirepoix, add crushed tomatoes, pesto and 1/2 cup (1 cup) water. Cook for 1-2, stirring occasionally until sauce thickens slightly. Season with salt and pepper.

  • To the pot with tortellini, add sauce, then stir to coat. 
  • Transfer saucy tortellini to an 8x8" baking dish (use a 9x13" baking dish for 4 servings.) 
  • Sprinkle cheese over top.
  • Bake in the middle of the oven, 5-6 min, until cheese is golden and melted.

  • Meanwhile, cut cucumber into 1/4-inch rounds. 
  • In a large bowl, combine spring mix, cucumbers and Caesar dressing, then toss to coat.

  • Divide casserole and salad between plates.
