Cooking Steps

Cook rice

  • Before startng, to a medium pot, add 1 1/4 cups (2 1/2 cups) water and garlic salt. Cover and bring to a boil over high heat.
  • Wash and dry all produce.
  • When the water is almost at a boil, using a strainer, rinse rice until water runs clear.
  • To the boiling water, add rice, then reduce heat to low. 
  • Cover and cook for 12 - 15 min, until rice is tender and liquid is absorbed. Remove from heat. Set aside, still covered.

  • Meanwhile, tear cilantro.
Cook turkey

  • Heat a large non-stick pan over medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then onions and turkey. Cook for 4-5 min, breaking up turkey into smaller pieces, until no pink remains.**
  • Add Mexican Seasoning and pineapple with its juices. Cook for 1 min, stirring often, until juices are absorbed. Season with salt and pepper.
Finish and serve

  • Fluff rice with a fork, then stir in half the crispy shallots.
  • Divide rice between bowls. Top with turkey-pineapple mixture.
  • Drizzle with chipotle sauce.
  • Dollop guacamole over top.
  • Sprinkle with cilantro and remaining crispy shallots.
