Cooking Steps

Cook shaved beef

  • Before starting, preheat the broiler to high.
  • Wash and dry all produce.
  • In a large non-stick pan, heat 1/2 tbsp (1 tbsp) oil over high.
  • When hot, add beef. Cook for 2 min, flipping occasionally, until beef is cooked through.**
  • Add beef broth concentrate and 2 tbsp (4 tbsp) water. Cook for 2-3 min, flipping to coat, until sauce reduces slightly.

  • Meanwhile, cut cucumber into 1/4-inch rounds.
  • Drain olives and roasted red peppers, then roughly chop both together.
  • In a small bowl, combine mayo and pesto. Season with salt and pepper.
Make salad

  • In a large bowl, whisk together half the vinegar (use all for 4 servings), half the Dijon (use all for 4 servings), 1/2 tsp (1 tsp) sugar and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper.
  • Add spring mix and cucumbers, then toss to coat. 
Toast buns and serve

  • Halve buns. 
  • On a foil-lined baking sheet, arrange buns, cut-sides up. Spread pesto-mayo over buns. Sprinkle cheese on buns. Broil buns in the top of the oven for 2-3 min, until cheese melts. (TIP: Keep an eye on them so they don't burn!)
  • Stack bottom buns with shaved beef, folding as necessary and olive-pepper mixture. Close with top buns. 
  • Divide salad and sandwiches between plates.
