  • Peel, then cut sweet potato into 1/4-inch pieces. 
  • Core, then cut pepper into 1/4-inch pieces. 
  • Peel, then mince or grate the garlic. 
  • Thinly slice green onions.

  • In a large pot, heat 1 tbsp (2 tbsp) oil over medium-high.
  • When the pot is hot, add sweet potatoes and peppers. Cook for 3-4 min, stirring frequently, until veggies have softend slighly. Trasnfer veggies to a plate and set aside.
Cook beef

  • To the large pot, add 1 tbsp (2 tbsp) oil, then beef. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.**
  • Carefully drain and discard excess fat. 
  • Add Smoked Paprika Garlic Blend and cook for 1-2 min, stirring often, until fragrant. Season with salt and pepper.

  • To the pot with beef, add farro, veggies, garlic, crushed tomatoes and 2 3/4 cups (5 1/2 cups) water. Bring to a boil over high.
  • Once boiling, reduce heat to medium-low. Cover and simmer for 15-17 min, stirring occasionally until farro is cooked through.
