Cooking Steps

Prep
1
  • Before starting, wash and dry all produce.
  • Zest, then juice half the lemon. Cut remaining lemon into wedges. 
  • Cut lettuce in half lenghwise, then cut into 1/2-inch pieces.
  • Peel, then mince or grate garlic.
  • Cut ciabatta into 1/2-inch cubes. 
  • Halve tomatoes.
Make dressing

  • To a small bowl, add mayo, Dijon, 2 tsp (1 tbsp) lemon juice, lemon zest and 1/8 tsp (1/4 tsp) garlic. Season with pepper, then combine.
Toast croutons

  • Heat a large non-stick pan over medium-high. 
  • Meanwhile, to a medium bowl, add ciabatta and 2 tsp (4 tsp) oil. Season with salt and pepper, then toss to coat. 
  • When pan is hot, add ciabatta. Cook 3-4 min, stirring occasionally, until golden on all sides. 
  • Transfer to a plate to cool.
Form and pan-fry patties

  • To the same bowl (from step 3), add beef, breadcrumbs, Zesty Garlic Blend, remaining garlic and 1/8 tsp (1/4 tsp) salt. Season with pepper, then combine. 
  • Form beef mixture into 6 (12) 3-inch wide patties.
  • Reheat the same pan over medium. 
  • When hot, add 1/2 tsp (1 tsp) oil, then patties. Pan-fry 3-4 min per side, until golden and cooked through.**
  • Remove from heat.
Finish salad

  • To a large bowl, add lettuce, spinach, tomatoes, Parmesan and half the dressing. Toss to combine.
Finish and serve

  • Divide salad between plates and top with croutons.
  • Top with patties. 
  • Drizzle remaining dressing over top. 
  • Squeeze a lemon wedge over top.
