Cooking Steps

  • Thinly slice chives.
  • Add arugula and spinach mix and 1/2 tbsp oil to a medium bowl. Season with a pinch of garlic salt and pepper, then toss to combine.
  • Crack eggs into a large bowl, season with 1/4 tsp garlic salt and pepper, to taste. Whisk until combined.
  • Add chorizo, breadcrumbs and 1/4 tsp garlic salt to another medium bowl. Season with pepper, then combine. Form mixture into four 4-inch-wide patties.

  • Heat a large pan over medium-high heat. When hot, add patties to the dry pan. Using the back of a spatula, gently press down on each patty.
  • Cook until bottoms are golden-brown, 3-4 min.
  • Flip patties. Cook until the other side is golden-brown and patties are cooked through, 2-3 min.** 
  • Transfer patties to a plate, then cover with foil to keep warm.

  • Reheat the same pan over medium-low heat. When hot, add 1 tbsp butter, then siwrl until melted.
  • Add eggs to the pan. Using a spatula, cook, stirring in a figure-eight pattern, until curds form and eggs are cooked through, 1-2 min.**
  • Remove from heat. Sprinkle half the cheese, then chives over eggs. Set aside until cheese melts, 1 min.

  • Halve bagels, then place on an unlined baking sheet. Sprinkle remaining cheese over bottom halves of bagels.
  • Toast in the middle of the oven until golden-brown, 3-4 min. (NOTE: Keep an eye on bagels so they don't burn!)
  • Stack dressed arugula and spinach, sausage patties and eggs on bottom halves. Close with top halves.
