One-Pot Corn and Chorizo Gnocchi

with Creamy Sweet Pepper Sauce

Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Core, then cut pepper into 1/2-inch pieces.
  • Thinly slice green onions, keeping white and green parts separate. 
Cook veggies and chorizo

  • Heat a large pot over high. When hot, add 1 tbsp (2 tbsp) oil, then chorizo, peppers, corn and green onion whites. Cook for 4-5 min, breaking up chorizo into smaller pieces, until no pink remains.**
Cook gnocchi

  • Add 1 tbsp (2 tbsp) butter and Cream Sauce Spice Blend. Cook for 1 min, stirring often, until butter melts.
  • Add gnocchi, pesto, cream cheese and 1 cup (2 cups) water.
  • Once boiling, reduce heat to medium-low. Cover and cook for 4-7 min, stirring often until gnocchi is tender and sauce has thickened slightly. (TIP: If you'd like a lighter sauce consistency, add water, 1-2 tbsp at a time.)
  • Season with salt and pepper. 
Finish and serve

  • Divide gnocchi between bowls.
  • Sprinkle remianing green onions over top.
