Prep and roast potato wedges

  • Before starting, preheat the oven to 450°F.
  • Wash and dry all produce.
  • Remove brown spots from potatoes and cut into 1/2-inch wedges.
  • To a parchment-lined baking sheet, add potatoes, half the Zesty Garlic Blend and 1 tbsp oil. (NOTE: For 4 servings, use 2 parchment-lined baking sheets with 1 tbsp oil per sheet.) Season with salt and pepper, then toss to coat. 
  • Roast in the middle of the oven for 23-25 min, flipping halfway through, until tender and golden. (NOTE: For 4 servings, roast in the middle and top of the oven, rotating sheets halfway through.)

  • Meanwhile, on another parchment-lined baking sheet, arrange bacon strips in a single layer 
  • Roast bacon for 8-12 min in the bottom of the oven, until crispy and cooked through.**
  • Transfer to a paper-towel-lined plate.

  • To a large bowl, add beef, breadcrumbs, Worcestershire, remaining Zesty Garlic Blend, 1/4 tsp (1/2 tsp) salt and 1/8 tsp (1/4 tsp) pepper.
  • Form beef mixture into 4 (8) equal-sized balls.
  • Place balls on a clean surface. Place a piece of parchment over top. 
  • Using a spatula or heavy-bottomed pan, flatten balls into 1/2-inch-thick patties.

  • Heat a large non-stick pan over medium. When hot, add patties to the dry pan. (NOTE: Don't crowd the pan; cook patties in 2 batches if needed.)
  • Pan-fry for 4-5 min per side, until cooked through.** Sprinkle cheese over patties. Cover the pan and cook about 1 min, until cheese melts. Transfer to a plate, then cover to keep warm.
Make fry sauce and toast buns

  • Meanwhile, to a small bowl, add half the ketchup and half the mayo. Stir, then season with salt and pepper. Set aside.
  • Arrange buns directly on the top rack of the oven, cut-sides up. Toast for 3-4 min, until golden. (TIP: Keep an eye on them so they don't burn!)
Finish and serve

  • Spread remaining mayo on bottom buns. Stack with pickles, spring mix, one patty, half the crispy shallots, another patty, remaining crispy shallots and bacon.
  • Spread remaining ketchup on to top buns, then place bun on top to close the burger.
  • Divide burgers and potato wedges between plates. Serve fry sauce on the side for dipping.
