Cooking Steps

Boil water and prep

  • Before starting, bring a large pot of salted water to a boil over high (use same for 4 servings).
  • Wash and dry all produce. 
  • Thinly slice mushrooms.
  • Trim ends from gai lan, then cut into 1-inch pieces.
  • Thinly slice green onion.
  • Peel, then mince or grate garlic.
  • In a medium bowl, whisk together brown sugar, stock powder, ginger sauce, soy sauce and 1/4 cup (1/2 cup) warm water. (TIP: Break up any brown sugar clumps with your hands before adding it to the sauce mixture.) (NOTE: This is your stir-fry sauce.)
Toast sesame seeds

  • Heat a large non-stick pan over medium.
  • When hot, add sesame seeds to the dry pan. Toast for 2-3 min, stirring often, until golden. (TIP: Keep your eye on them so they don't burn!)
  • Transfer to a plate.
Cook beef and veggies

  • Increase heat to medium-high.
  • To the same pan, add 1/2 tbsp (1 tbsp) oil, then beef, mushrooms, onions and garlic. Cook for 3 min, breaking up beef into smaller pieces, until veggies start to soften and beef begins to brown. 
  • Add gai lan. Cook for 2-3 min, stirring occasionally, until veggies are tender and no pink remains in beef.**
  • Add half the stir-fry sauce (from step 1) and cook for 1-3 min, stirring often, until sauce thickens slightly. Season with salt and pepper.
  • Remove from heat.
Boil noodles

  • Meanwhile, to the boiling water, add noodles. Cook for 1-3 min, stirring occasionally, until tender but still firm to the bite.
  • Strain and rinse noodles with warm water.
  • Return noodles to the pot and set aside. 
Finish and serve

  • To the pot with noodles, add beef-veggie mixture, then toss to coat. Season with salt and pepper.
  • Divide noodles between plates.
  • Drizzle remaining stir-fry sauce over top.
  • Sprinkle with sesame seeds and green onions.
  • Add some chili flakes, if you like.
