Cooking Steps

Cook rice

  • Before starting, preheat the oven to 425°F.
  • To a medium pot, add 1 1/4 cups (2 1/2 cups) water, half the Asian Sesame Blend and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high. 
  • Wash and dry all produce.
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed.
  • Remove from heat. Set aside, still covered.
Prep

  • Cut broccoli into bite-sized pieces.
  • Peel, then mince or grate garlic.
  • Peel, then cut onions into 1/4-inch pieces.
  • Thinly slice green onions.
Roast broccoli

  • To an unlined baking sheet, add broccoli, 1 tbsp (2 tbsp) oil, 1 tbsp (2 tbsp) water and remaining Asian Sesame Blend. Season with salt and pepper, then toss to coat.
  • Roast in the middle of the oven for 12-14 min, until golden. 
Cook Plant-based Patties

  • Heat a large non-stick pan over medium-high.
  • When hot, add Plant-based Patties, 1/2 tbsp (1 tbsp) sugar, onions and garlic. Cook for 5-6 min, breaking up patties into smaller pieces, until crispy.**
  • Add ginger sauce, half the cashews and 1/4 cup (1/2 cup) water. Cook for 3-4 min, stirring often, until thickened. Season with salt and pepper.
Finish and serve

  • Fluff rice with a fork.
  • Divide rice between bowls.
  • Divide Plant-based Patty mixture and broccoli between bowls.
  • Sprinkle remaining cashews and green onions over top.
