Cooking Steps

Cook rice

  • Before starting, add 1 1/4 cups (2 1/2 cups) water and 1/8 tsp (1/4 tsp) salt to a medium pot. Cover and bring to a boil over high.
    Wash and dry all produce.
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and liquid is absorbed. Remove from heat. Set aside, still covered.

  • Peel, then cut yellow onion into 1/4-inch slices.
  • Thinly slice green onions.

  • Heat a large non-stick pan over medium. When hot, add 1 tbsp (2 tbsp) oil and yellow onions.
  • Cook for 5-6 min, stirring occasionally, until caramelized. Season with salt and pepper.
Cook beef

  • To the same pan with onions, add beef and honey. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.** Carefully drain and discard excess fat.
  • Add soy-mirin blend, miso broth concentrate, carrots and 1/4 cup (1/2 cup) water. Bring to a simmer. Cook for 3-5 minutes, stirring occasionally, until thickened and coated. Season with salt and pepper.
Cook egg

  • Meanwhile, in a medium non-stick pan (use a large pan for 4 servings), melt 1 tbsp (2 tbsp) butter over medium.
  • Crack eggs into the pan, then sprinkle with sesame seeds. Season with salt and pepper. Pan-fry 2-3 min, covered, until egg whites are set. (NOTE: Yolks will still be runny.)
Finish and serve

  • Add half the green onion, then fluff with a fork. Season with salt.
  • Divide rice between bowls.
  • Divide beef mixture between bowls and top with eggs.
  • Sprinkle with remaining green onions.
