Cooking Steps

Prep

Trim ends off broccolini, then cut any thicker stalks in half lengthwise, leaving thinner stalks whole. Peel, then thinly slice 2 shallots.

Roast broccolini

Add broccolini, 1/2 tsp garlic salt and 1 tbsp oil to a parchment-lined baking sheet. Season with pepper, then toss to coat. Roast in the top of the oven, stirring halfway through, until broccolini is tender, 12-16 min.

Fry shallots

While broccolini roasts, heat a large non-stick pan over medium heat. When hot, add 1 tbsp oil, then shallots and 1/2 tsp garlic salt. Cook, stirring occasionally, until golden, 4-5 min. Remove the pan from heat, then season with pepper.

Finish and feast

When ready to serve, add fried shallots to the baking sheet with broccolini, then toss to combine. Transfer broccolini and shallots to a serving platter. Sprinkle crispy shallots over top.
