Fiery Korean-Style Organic Chicken Breast Tacos

with Pear Slaw

Korean chicken has captivated the world, so why not enjoy it in a taco? Chicken is cooked in a gochujang and soy-based butter, then paired with a pear coleslaw to add some sweetness.

Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Core, then cut pear into 1/4-inch matchsticks.
  • In a large bowl, whisk together half the spicy mayo and vinegar. Season with pepper and 1/4 tsp (1/2 tsp) garlic salt.
  • To the bowl with dressing, add pears. Toss to coat. 
Cook chicken

  • On a seperate cutting board, pat chicken dry with paper towels, then cut into 1-inch pieces. Season pepper and 1/4 tsp (1/2 tsp) garlic salt.
  • Reheat the same pan over medium-high
  • When hot, add 1 tbsp (2 tbsp) oil, then chicken. Cook for 6-8 min, stirring occasionally, until golden and cooked through.**
  • Remove from heat.
  • Add gochujang, soy sauce, 2 tbsp (4 tbsp) butter and 1 tsp (2 tsp) sugar, then stir for 30 sec, until chicken is well coated and sugar dissolves.
Warm tortillas

  • Just before serving, wrap tortillas in paper towels.
  • Microwave for 30 sec-1 min, until tortillas are warm and flexible. (TIP: You can skip this step if you don't want to warm the tortillas.)
Make slaw

  • To the bowl with pears and dressing (from step 1), add coleslaw cabbage mix.
Finish and serve

  • Divide slaw between tortillas, then top with chicken.
  • Drizzle remaining spicy mayo over top.
