Cooking Steps

  • Before starting, preheat the oven to 450ºF. Wash and dry all produce.
  • Cut cauliflower into bite-sized pieces.
  • To a large bowl, add cauliflower and chipotle sauce. Stir to coat. Add Mexican Seasoning, salt and pepper, then toss to coat. 
  • Divide cauliflower between two parchment-lined baking sheets. Roast in the middle and bottom of the oven for 16-20 min, stirring and rotating sheets halfway through, until tender.

  • Meanwhile, heat a medium pot over medium.
  • When hot, 1 tbsp butter, then swirl the pan to melt.
  • Sprinkle flour over top of butter. Cook for 30 sec, stirring constantly, until well combined.
  • Add cream cheese, 1/4 cup water and Tex-Mex paste to the pot. Cook for 2-3 min, whisking often, until cream cheese is melted.
  • Add cream. Cook for 2-3 min, whisking often, until sauce thickens slightly.

  • Remove the pot from heat. Add cheddar cheese. Whisk constantly for 1 min, until cheese is melted and sauce is smooth. Season with salt. 
  • Cover to keep warm.
  • Meanwhile, roughly chop cilantro.
  • Cut lime into wedges.

  • Transfer queso to a medium serving bowl and place in the centre of a large platter. 
  • Arrange cauliflower bites around queso.
  • Squeeze lime wedges over cauliflower. 
  • Sprinkle cilantro over top.
