Cooking Steps

Cook bacon

  • Arrange bacon strips in a single layer on a parchment-lined baking sheet. Roast bacon in the top of the oven until crispy and cooked through, 8-12 min.**
  • Using tongs, transfer bacon to a paper towel-lined plate.
  • Halve bacon once cooled.

  • Halve bagels.
  • Cut tomato into 1/4-inch slices, then season with 1/8 tsp garlic salt and pepper.
  • Combine guacamole and 1/8 tsp garlic salt in a small bowl. Season with pepper, then stir to combine.
Fry eggs

  • Heat a large non-stick pan over medium-high heat. 
  • When hot, add 1 1/2 tbsp butter and swirl the pan until melted. 
  • Crack in eggs. Season with 1/4 tsp garlic salt and pepper. Cover and pan-fry until egg whites have set, 2-3 min.** (NOTE: The yolks will still be runny.) Remove lid, then sprinkle cheese over top. Cover until cheese has melted, 1 min.
Assemble sandwiches and serve

  • Arrange bagels on an unlined baking sheet, cut-side up.
  • Toast in the middle of the oven until golden-brown, 3-4 min. (TIP: Keep an eye on bagels so they don’t burn!) 
  • Spread guacamole over bottom bagels and mayo over top bagels. Stack arugula and spinach mix, tomatoes, eggs and bacon on bottom bagels. Close with top bagels.
