Before starting, preheat the oven to 450ºF.Wash and dry all produce. Arrange bacon strips in a single layer on a parchment-lined baking sheet. Roast bacon in the top of the oven until crispy and cooked through, 8-12 min.**Using tongs, transfer bacon to a paper towel-lined plate. Halve bacon once cooled.
Halve bagels.Cut tomato into 1/4-inch slices, then season with 1/8 tsp garlic salt and pepper.Combine guacamole and 1/8 tsp garlic salt in a small bowl. Season with pepper, then stir to combine.
Heat a large non-stick pan over medium-high heat. When hot, add 1 1/2 tbsp butter and swirl the pan until melted. Crack in eggs. Season with 1/4 tsp garlic salt and pepper. Cover and pan-fry until egg whites have set, 2-3 min.** (NOTE: The yolks will still be runny.) Remove lid, then sprinkle cheese over top. Cover until cheese has melted, 1 min.
Arrange bagels on an unlined baking sheet, cut-side up. Toast in the middle of the oven until golden-brown, 3-4 min. (TIP: Keep an eye on bagels so they don’t burn!) Spread guacamole over bottom bagels and mayo over top bagels. Stack arugula and spinach mix, tomatoes, eggs and bacon on bottom bagels. Close with top bagels.
