Heat falafel

Halve falafel. Add falafel to a microwave-safe plate. Drizzle 1 tsp oil over falafel. Cover and microwave on high for 1-2 min. (NOTE: You can also heat the falafel in a microwave oven, uncovered, on high for 2-3 min until toasted.)

Thinly slice cucumber. Tear or chop olives. Mix together mayo and hummus in a small bowl.

Assemble wraps and serve

Spread hummus mixture over tortillas. Top with spring mix, cucumbers, carrots, olives and falafel. Season with salt and pepper.
