Cooking Steps

Roast sweet potato coins

  • Before starting, preheat the oven to 450°F.
  • Lightly oil the grill. While you prep, preheat the grill to medium-high (approx. 500°F).
  • Wash and dry all produce.
  • Peel, then cut sweet potatoes into 1/2-inch rounds.
  • To a parchment-lined baking sheet, add potatoes and 1 tbsp (2 tbsp) oil. (NOTE: For 4 servings, use 2 baking sheets.) Season with salt, pepper and half the Zesty Garlic Blend. Toss to coat.
  • Roast in the middle of the oven for 18-24 min, flipping halfway, until tender and golden. (NOTE: For 4 servings, roast in the middle and bottom of the oven, switching baking sheet positions halfway through.)
Prep and make topping

  • Meanwhile, heat a medium non-stick pan over medium.
  • While the pan heats, halve cucumber lengthwise. Cut into 1/4-inch half-moons.
  • In a small bowl, combine ranch and half the Parmesan.
  • When the pan is hot, add 1 tbsp (2 tbsp) butter, then half the panko (use all for 4 servings). Toast for 3-5 min, stirring often, until golden. Season with salt and pepper.
  • Transfer to a plate.
Make sauces

  • In a large bowl, whisk together half the vinegar (use all for 4 servings), half the mustard, 1/2 tsp (1 tsp) sugar and 1 tbsp (2 tbsp) oil. Season with salt and pepper. (NOTE: This is your salad dressing.)
  • In another small bowl, combine mayo and remaining mustard. Season with salt and pepper. (NOTE: This is your dipping sauce.)
Prep chicken

  • Pat chicken dry with paper towels. Season with salt, pepper and remaining Zesty Garlic Blend. Drizzle 1/2 tbsp (1 tbsp) oil over top. Flip to coat.
  • On a platter, gather chicken, a clean plate, Parmesan-ranch mixture, a spoon and any grilling tools, then head out to grill!
Grill chicken

  • Add chicken to the grill. Reduce heat to medium, close lid and grill for 5-8 min per side until chicken is cooked through.**
  • When the chicken is done, spoon Parmesan-ranch mixture on top, close lid and grill for 2-4 min, until Parmesan melts. 
  • Lightly press crumb topping on the tops of chicken, then let rest for 3 min.
Finish and serve

  • To the bowl with salad dressing (from step 3), add spring mix and cucumbers, then toss to coat.
  • Divide chicken, potato coins and salad between plates.
  • Sprinkle remaining Parmesan over salad.
  • Serve mayo-mustard sauce alongside for dipping.
