Cooking Steps

  • To a small bowl, add half the mayo (use all for 4 ppl) and 1 tbsp (2 tbsp) pesto. Stir to combine, then set aside. 
  • Heat a medium non-stick pan over medium-high heat. Add 2 tsp (4 tsp) oil, then panko. Toast 2-3 min, stirring often, until golden-brown. Transfer to a shallow dish.

  • Pat salmon dy with paper towels. Sprinkle over half the Zesty Garlic Spice Blend, then season with salt and pepper. 
  • Coat only the salmon tops with mayo-pesto mixture. 
  • Working with one piece of salmon at a time, press the mayo-coated side into the panko.
  • Transfer to a parchment-lined baking sheet. Roast in the top of the oven, until salmon is cooked through, 10-12 min.**

  • Meanwhile, to the boiling water, add orzo. Cook for 8-10 min, stirring occasionally, until tender but still firm to the bite.
  • Strain orzo, then return to the pot, off heat. 
  • Stir in 1 tbsp (2 tbsp) butter.

  • Roughly chop spinach. 
  • Add remaining Zesty Garlic Spice Blend, remaining sun-dried tomato pesto and spinach to the pot with orzo. Stir for 1 min, until well combined and spinach is wilted. Season with salt and pepper, to taste.

  • Divide orzo between plates. 
  • Sprinkle over feta cheese. 
  • Top with salmon.
