  • Before starting, preheat the oven to 425°F. 
    Before starting, bring a large pot of salted water to a boil (use same for 4 servings).
    Wash and dry all produce.
  • To a small bowl, add mayo and half the Zesty Garlic Blend. Stir to combine, then set aside. 
  • Roughly chop spinach. 
  • Thinly slice chives.

  • Meanwhile, heat a medium non-stick pan over medium-high.
  • When hot, add 2 tsp (4 tsp) oil, then panko.
  • Toast for 2-3 min, stirring often, until golden. Transfer to a shallow dish.
Roast salmon

  • Pat salmon dy with paper towels.
  • Season with remaining Zesty Garlic Blend, salt and pepper. 
  • Coat flesh sides of salmon with mayo-Zesty Garlic Blend mixture. 
  • Working with one piece of salmon at a time, press the mayo-coated side into the toasted panko.
  • On a parchment-lined baking sheet, arrange coated salmon.
  • Roast in the top of the oven for 12-14 min, until salmon is cooked through.**
Cook orzo

  • Meanwhile, to the boiling water, add orzo.
  • Cook for 8-10 min, stirring occasionally, until tender but still firm to the bite. Reserve 1/4 cup (1/2 cup) pasta water.
  • Strain orzo, then return to the pot, off heat.
  • To the pot with orzo, add 1 tbsp (2 tbsp) butter, sun-dried tomato pesto, spinach and 2 tbsp (4 tbsp) reserved pasta water.
  • Stir for 1 min, until well-combined and spinach is wilted.
  • Add half the feta and season with salt and pepper.
Finish and serve

  • Divide orzo between bowls. 
  • Top with salmon. 
  • Sprinkle chives and remaining feta over top.
