Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Quarter zucchini lengthwise, then cut into 1/2-inch quarter-moons.
  • Core, then cut pepper into 1/4-inch pieces.
  • Strip oregano leaves from half of the stems (use all for 4 servings), then roughly chop.
  • Peel, then mince or grate garlic.
Cook veggies

  • Heat a large non-stick pan over medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then zucchini and peppers. Cook for 3-4 min, stirring often, until tender-crisp. Season with salt and pepper.
  • Add garlic. Cook for 30 sec, stirring often, until fragrant.
  • Transfer to a plate.
Cook turkey

  • To the same pan, add 1 tbsp (2 tbsp) oil, then turkey. Cook 4-5 min, breaking up turkey into smaller pieces, until no pink remains.**
Cook beans and start sauce

  • Add cannellini beans and their liquid, marinara sauce, Zesty Garlic Blend, oregano and 1/4 cup (1/2 cup) water. Season with salt and pepper.
Finish and serve

  • Divide turkey-bean mixture between bowls. Top with zucchini and peppers.
  • Sprinkle Parmesan over top.
