Cooking Steps

Marinate veggies

  • Before starting, boil a large pot of salted water. Wash and dry all produce.
  • Cook noodles in boiling water 12-14 min, until tender. Strain and rinse with warm water. Toss with 1 tsp oil. Transfer cooled noodles to 2 containers. 
  • Cut cucumber into 1/4-inch pieces. 
  • In a microwavable bowl, mix vinegar, 2 tbsp water and 2 1/2 tsp sugar. Season with salt. Microwave until sugar dissolves.  Add carrots and cucumbers. Stir to coat, then cool completely in the fridge.
Cook noodles and prep lunches

  • Heat a large non-stick pan over medium-high. When hot, add 1 tbsp oil, then turkey, soy sauce and garlic puree. Cook for 4-5 min, breaking up turkey into smaller pieces, until no pink remains.** 
  • Add sweet chili sauce. Cook 30 sec, stirring constantly, until meat is coated. Season with salt and pepper. 
  • Top noodles with turkey mixture. Refrigerate until ready to eat. 
  • Strain marinated vegetables. Divide between 2 containers. Tear or chop cilantro, then add to containers. Refrigerate until ready to eat. 
Heat and eat

  • When ready to eat, microwave noodles and turkey until warm.
  • Add marinated vegetables, drizzle with spicy mayo and sprinkle with crispy shallots.
