Cooking Steps

  • Before starting, bring a large pot of salted water to a boil over high. Wash and dry all produce.
  • To the boiling water, add noodles. Cook for 10-12 min, stirring occasionally, until tender.
  • Strain and rinse noodles with warm water. Toss with 1 tsp oil. 
  • Once cool to the touch, transfer noodles to 2 air-tight containers. Set aside.

  • Meanwhile, cut cucumber into 1/4-inch pieces. 
  • To a medium microwavable bowl, add  vinegar, 2 tbsp water and 2 1/2 tsp sugar. Season with salt. Microwave for 1-2 min, stirring occasionally, unitl sugar has disolved. 
  • Add carrots and cucumbers. Stir to coat, then set aside in the fridge.
  • Heat a large non-stick pan over medium-high.
  • When hot, add 1 tbsp oil, then turkey, soy and garlic puree. Cook for 4-5 min, breaking up turkey into smaller pieces, until no pink remain.** 
  • Add Sweet Chili Sauce. Cook for 30 sec, stirring constantly, until meat is coated. Season with salt and pepper. 
  • Top noodles with turkey mixture. Cover and refridgerate until ready to eat.

  • Once marinated vegetables are fully cooled, strain. Divide between 2 air-tight containers. Tear or chop cilantro over. Cover and refrigerate. 
  • When ready to eat, microwave noodles and turkey until warm.
  • Add marinated vegetables to dish.
  • Drizzle over spicy mayo.
  • Sprinkle over crispy shallots.
