Cooking Steps

  • Before starting, preheat the broiler to high.
  • Wash and dry all produce.
  • Peel, then halve carrot lengthwise. Cut into 1/4-inch half-moons.
  • Peel, then finely chop shallot. 
  • On a foil-lined baking sheet, toss together snap peas, carrots and 1/2 tbsp (1 tbsp) oil.
  • Broil in the middle of the oven, 5-9 min, until tender-crisp. Season with salt and pepper.

  • Meanwhile, pat steaks dry with paper towels. Season with salt and pepper. 
  • Heat a large non-stick pan over medium.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then steaks. Pan-fry for 3-7 min per side or until cooked to desired doneness.** 
  • Remove from heat and transfer to a plate.
  • Loosely cover with foil and set aside to rest for 2-3 min.

  • To a large microwave-safe bowl, add mashed potatoes and 2 tbsp (4 tbsp) pantry milk. Season with salt and pepper.
  • Microwave for 3 min, uncovered, until heated through.
  • Reheat the same pan (from step 1) over medium.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then shallots. Cook for 1 min, stirring often, until shallots begin to soften.

  • To the same pan, add tomato sauce base, broth concentrate, soy sauce, half the Worchestershire sauce (use all for 4 servings), 1/8 tsp (1/4 tsp) sugar, 1/4 tsp (1/2 tsp) espresso powder, 2 tbsp (4 tbsp) butter and 1/2 cup (1 cup) water. (NOTE: Save remaining espresso powder for a future creation.) Cook for 1 min, stirring often, until sauce thickens slightly.
  • Thinly slice steak, then add any steak juices to the sauce.
  • Divide mash and veggies between plates. Top mash with steak, then spoon sauce over top.
