Cooking Steps

Toast buns and prep

  • Before starting, preheat the broiler to high.
  • Wash and dry all produce.
  • Halve buns.
  • Arrange buns directly on the top rack of the oven, cut-sides up. Broil for 1-2 min, until browned. (TIP: Keep an eye on them so they don't burn!)
  • Thinly slice half the tomatoes. Cut remaining tomato into 1/4-inch pieces. Season with salt and pepper.
Cook filling

  • In a large non-stick pan, heat 1/2 tbsp (1 tbsp) oil over medium-high.
  • When the pan is hot, add beef and onions. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.**
  • Carefully drain and discard excess fat.
  • Add stock powder and 3 tbsp (6 tbsp) water. Cook for 1-2 min, stirring often, until fragrant. 
  • Reduce heat to low.
  • Sprinkle cheese over top of beef-onion mixture. Cook, covered, for 2-3 min, until cheese has melted.
Make salad dressing

  • Meanwhile, in a large bowl, whisk together vinegar, half the whole grain mustard, 1 tsp (2 tsp) sugar and 1 tbsp (2 tbsp) oil. Season with salt and pepper.
Finish and serve

  • In a small bowl, combine spicy mayo and remaining whole grain mustard.
  • Spread spicy mustard-mayo on cut sides of buns. Divide filling between buns, then top with sliced tomato and some dressed spring mix.
  • Add diced tomato and remaining spring mix to the bowl with dressing. Toss to coat.
  • Divide sandwiches and salad between plates.
