Toast buns and prep

  • Before starting, preheat the broiler to high.
  • Wash and dry all produce.
  • Halve buns.

  • In a small bowl, combine spicy mayo and remaining whole grain mustard.
  • Spread spicy mustard-mayo on cut sides of buns. Divide filling between buns, then top with sliced tomato and some dressed spring mix.
