Cooking Steps

  • Preheat the oven to 425°F. Wash and dry all produce.
  • Strip sage leaves from stems, then finely chop 1/2 tbsp.
  • Cut sweet potatoes into 1/2-inch rounds. To a parchment-lined baking sheet, add potatoes, chopped sage and 1 tbsp oil. Season with 1 tsp garlic salt and pepper, then toss to coat.
  • On another parchment-lined baking sheet, arrange bacon in a single layer.

  • Roast sweet potatoes in the middle of the oven for 8-9 min, until soft on one side.
  • Flip sweet potatoes. Drizzle over maple syrup. Return to the middle of the oven. Cook for 8-9 min, until sweet potatoes are tender and glazed. 
  • Meanwhile, roast bacon in the bottom of the oven for 14-18 min, until bacon is crisp and cooked through.**
  • Transfer bacon to a paper towel-lined plate to cool.

  • Meanwhile, thinly chop chives.

  • Crumble or cut bacon into 1/4-inch pieces. 
  • Place sweet potato coins on a serving dish, overlaping slightly. 
  • Top with crumbled bacon.
  • Dollop little spoonfuls of sour cream around the dish. 
  • Sprinkle over chives. 
  • Serve family-style.
