SuperQuick Turkey-and-Mushroom Melts

with Mozzarella Cheese

These beef-and-mushroom open-faced sandwich melts, filled to the brim with flavour, will be a new family favourite! Plus, they're on the table in 15 minutes. It doesn't get much better than that.

Cooking Steps

Cook turkey and onions

  • Before starting, preheat broiler to high.
    Wash and dry all produce.
  • Heat a large non-stick pan over high. 
  • When hot, add 1 tbsp (2 tbsp) oil, then turkey and onions to the pan. Cook, breaking up turkey into smaller pieces, until no pink remains, 3-4 min.** 
  • Season with salt and pepper. 
Prep and cook veggies

  • Meanwhile, thinly slice mushrooms. 
  • Once turkey is cooked, add mushrooms and half the garlic spread to the pan. 
  • Cook for 2-3 min, stirring often, until mushrooms have softened.
Finish filling and toast buns

  • Add half the beef stock powder (use all for 4 servings) and 1/4 cup (1/2 cup) water. Cook for 1-2 min, stirring often, until slightly thickened.
  • Remove the pan from heat, then top with cheese and cover, to allow cheese to melt. 
  • Meanwhile, halve buns and spread cut sides with remaining garlic spread. 
  • Arrange buns on an unlined baking sheet, cut-sides up, then broil for 1-2 min, until golden. (TIP: Keep an eye on buns so they don't burn!)
Finish and serve

  • To a large bowl, add spring mix.
  • Drizzle ranch dressing over top, then toss to combine. 
  • Top with salad topping mix.
  • Divide filling between toasted buns. 
  • Divide melts and salad between plates.

If you've opted to get turkey, add 1 tbsp (2 tbsp) oil to the pan, then add turkey and onions. Cook turkey in the same way the recipe instructs you to cook the beef.**  Disregard instructions to drain excess fat.
